Each spoonful of this refreshing mint gelato is delicious and it is not difficult to make either. The recipe uses a bunch of fresh mint leaves, so this is a great treat to make if you have some mint growing in your garden.
Delicious Mint Gelato
Preparation Time: 6 hours (allowing time to freeze)
Cooking Time: 5 minutes
Makes: 4 servings
Ingredients 1 cup fresh mint leaves
1/2 cup filtered water
1/2 cup sugar
3 egg yolks
2/3 cup thickened cream
2/3 cup plain yogurt
Mint Gelato ingredients
Chop the fresh mint leaves and add them to 1/2 cup of filtered water and 1/2 cup sugar in a saucepan. Bring to the boil, simmer for five minutes, then allow this mint syrup to cool.
In another saucepan, heat the milk and egg yolks, and whisk them together. Simmer for five minutes, then allow to cool.
Combine the cream, mint syrup and milk custard in a food processor. Whiz these ingredients together.
Pour the mixture into a container and freeze for two hours.
Remove the container. The mint/ milk mixture should be beginning to turn hard around the edges. Mix the frozen parts into the liquid parts well and refreeze for another two hours. (Alternatively use an ice cream machine if you are lucky enough to own one).
Repeat the mixing process, until the mixture resembles ice cream/gelato.
Serve on it's own or with some fresh fruit salad. Enjoy.
