Almost-Festive Turkey Dinner

For a less-festive alternative to turkey, try gently fried turkey thigh with herbs and veggies, and you've got a dish your kids will enjoy. Filling, and flavoursome, it's a great after-school dish which is fragrant as as it is tasty. And there's no cranberry sauce in sight.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 2 child servings

Ingredients
180g turkey thigh
2 carrots
1 onion
1 garlic clove
1 rosemary sprig
200ml water
100ml orange juice
Handful spring greens

Method
finely chop the garlic and onion and add to a large frying pan. Cook over a low heat for 10 minutes.



Whilst they are cooking peel and chop the carrots.



Add to the frying pan alog with the rosemary and pepper. Cook for 10 minutes ovet a medium heat.



Add the turkey and turn the heat to high to sear the meat.



Pour in the water and allow to cook for 15 minutes.



Wash the greens.

Add the orange juice and greens for the final 5 minutes of cooking.



Plate up.
