Almond Butter Fingers
Almond Butter Fingers are great fun to make, buttery and crunchy. Great for a quick snack or treat, store in a air tight container for them to last a week!

: 4 servings
90g unsalted butter, softened.
½ cup caster sugar
½ tsp vanilla essence
1 cup plain flour
¼ cup flaked almonds
30g white chocolate (optional)
Preheat oven to 160°C, line a baking tray.
Beat together the butter and sugar together until pale
Add in the vanilla essence and egg, beat well to combine.
Sift in the flour.
Stir to combine into a dough.
Wrap the dough in plastic wrap and place into the refrigerator until firm.
Remove from refrigerator and roll the dough out into approximately 4mm thickness.
Cut the dough into 6cm x 3cm fingers.
Place on the prepared tray and sprinkle almond flakes over, pressing them down to secure.
Bake for 10 minutes or until golden.
Microwave to melt the white chocolate and drizzle on top to serve.
