I'm currently holidaying in Abu Dhabi, where my sister used a number of Arabic spices and ingredients to create a delicious chicken dish. Safe to say my sisters, our niece and nephew, all loved the meal, which uses local ingredients to spice, season and flavour the meat we all love.
Ingredients 1 red onion
2 garlic cloves
1 chunk of ginger
Tsp dried thyme leaves
Half tsp ground black pepper
6 chicken thighs
5 tblsp of olive oil
1/4 of cup of coconut milk
1/2 a cup of water
1 cup of brown rice
Peel the ginger and chop to equal size along with the onion and crush the garlic.
Add the chopped vegetables to a large bowl.
Add the spices and toss.
Peel the orange and add to the bowl in chunky segments. Add the chicken.
Combine the spices, meat and vegetables. Leave to marinate for at least an hour before cooking, if you have the time.
After marinating transfer the dish to a large baking tray and cook for 45 minutes at 180 degrees/gas mark 4.
Cook the rice in the water and coconut milk for 20 minutes over a medium heat.
Remove the chicken from the oven and serve alongside the side.
