This is a really quick and easy chocolate chip cake that you can make in the microwave. I use this one when I just don't have time to make a full chocolate cake, there are no other treats or fruit in the house, and the minions are ravenous. I have also tried a mug brownie, and a microwave choc chip cookie, and would recommend this one over the brownie and say it's on par with the quick cookie.
4 tablespoons of plain flour
4 tablespoons of sugar or caster sugar
2 tablespoons of cocoa powder
3 tablespoons of milk
3 tablespoons of olive oil
2 tablespoons of chocolate chips or chopped chocolate
1/4 teaspoon of vanilla extract.
Into a microwave safe mug, place the flour and sugar and mix to combine.
Add the cocoa powder and stir through until well combined.
Crack an egg into the mug. Use a fork to lightly beat the egg as it sits on top of the cocoa/flour mixture, then mix the egg through the rest of the ingredients until completely combined.
Pour in the milk, oil and vanilla and mix well. Make sure to stir in all of the ingredients that may be hiding in the bottom corners of the mug.
Add the chocolate chips or chopped chocolate and fold through the chocolate cake mixture. If all the chocolate has disappeared, never fear! The chocolate cake still turns out fairly delicious without it.
Place the mug in the microwave and heat, on high, for 3 minutes.
Remove the mug from the microwave and set the chocolate cake aside for 1 or 2 minutes to cool slightly. The cake will also continue to cook within itself.
Eat with a spoon from the mug, or tip the cake onto a plate. Add a dollop of ice cream for extra oomph.
